Carrie's Healthy Living
About Carrie

I do not remember my birth but I do remember Schneckenburger grammar school.  I attended there 3rd to 5th grade.  During the summer I went to the Louisiana Lions Camp, first as a camper, then I became a counselor, and years later I became the chief clinical dietitian.  At Diabetic camp I met Heidi Schumacher RD, chief clinical Dietitian at Children’s Hospital, who inspired me to become a dietitian.  Next step I went to Roosevelt Middle School for junior high.  For high school I attended Archbishop Chapelle which I learned importance of nutrition from my home economics teacher who prepared me for college.  My first year of college I went to the University of New Orleans, then I graduated with a bachelors of science in nutrition from The University of Southern Mississippi.  I became an active member in the Dietetic Association and in Phi Mu sorority.  During school breaks I worked in food service as a patient meal assembler at Kenner Regional Medical Center.  I then went on to earn a Masters in Public Health at Tulane University when I completed my dietetic internship.  My thesis titled Children with Cystic Fibrosis and Risk Factors for Poor Bone Health was presented at the National American Dietetic Association Annual Conference.  Upon graduation, I began working for Sodexho Healthcare services and traveled as a Resource Dietitian and I worked in many hospitals.  One hospital in Dublin Georgia, Fairview Park Hospital, I worked in a children’s outpatient clinic teaching healthy eating and cooking for parents.  I then returned to New Orleans, and began working at West Jefferson Medical Center where I developed and implemented a Heart Smart program for patients with congestive heart failure and a started Wellness and You program.  I met my husband, Rick and 2 years later we were blessed with twins.  Dylan and Marissa were born at Oschner Hospital. My last adventure that I hold dear to my heart was collaboration with a team of dietitians, Create your Weight for kids was published and is now in practice in many clinics through out this region.  Currently I am the food service director at Lakeview Regional Medical Center  overseeing patient meals, retail and visitor meals and physician’s meals.  My food service team and I are working to provide healthy nutritious meals to all customers in our community with nutrition education when available.
